To delete the actual data, just delete it from the collection, either using the webinterface, powershell, nodered or robot. To delete the history of the data, you can connect to the database using the mongo shell or MongoDB Compass, and delete some or all the data from the [collectionname]_hist collection
If you don't want to keep history for certain collections you can set the skip_history_collections to a comma seperated list of collections you don't want to keep history for
would be a good starting point, but choose what fits your use case.
